Course Description

Celebrate the flavors of spring with an elegant brunch menu featuring seasonal ingredients and classic techniques! This comprehensive workshop covers from perfectly executed eggs Benedict to fresh pastries and vibrant salads. Students will master timing, presentation, and flavor combinations that make brunch service exceptional. 

Course Outline

Introduction to brunch service and seasonal ingredients 
Pastry and bread preparation (mixing, shaping, baking) 
Egg cookery techniques and sauce preparation 
Salad composition and fresh preparation techniques 
Plating, garnishing, and service simulation 
Tasting, feedback, and professional cleanup 
 

Learner Outcomes

1.    Execute multiple egg cookery methods with consistency and proper texture. 
2.    Prepare hollandaise sauce and other brunch accompaniments safely. 
3.    Create fresh, seasonal salads with balanced flavors and textures. 
4.    Demonstrate professional plating techniques for brunch service. 
5.    Coordinate timing for multiple dishes in a service environment. 
6.    Apply food safety protocols specific to egg-based dishes and dairy products.
